One of chef's favorite pasta & sauce combination.
Mafaldine, also known as reginette or simply mafalda or mafalde, is a type of ribbon-shaped pasta. It is flat and wide, usually about 1 cm in width, with wavy edges on both sides. It is prepared similarly to other ribbon-based pasta such as linguine and fettuccine. we love it with our tomato sauce
IGP Sicilia is the latest development from Frantoi Cutrera in Sicily. This is a lush blend of Biancollila and Nocellara del Belice olives, native to Sicily. It is medium fruity with notes of tomatoes and artichokes. The finish has lingering bitter and spicy notes. Bottles are hand painted in Caltagirone, Sicily.
Manicardi Botticella Oro IGP is a classic balsamic vinegar made in the traditional Modena style. Aged in casks made from chestnut, cherry, juniper, mulberry and oak wood, creating a rich and harmonious flavor as it ages. A high content of cooked must gives this balsamic a sweet flavor which makes it ideal for pairing with strawberries, aged parmigiano Reggiano, roasted meats, ice cream and sorbets.
Packaged in a gold box containing a beautiful bottle with exclusive dropper.
Rigatoni, which comes from the word “rigato” meaning ridged, are short, wide tubes of pasta that have ridges on the outside, but are smooth on the inside. Rigatoni are perfect for big chunkier sauces as their ridges and wide center help capture the sauce perfectly.
We love them with our 'norma' sauce or the white mushroom ragu
Pappardelle are large, very broad, flat pasta, similar to wide fettuccine, with fluted edges originating from the region of Tuscany.
We love our pappardelle pasta with quite a lot of sauces but the winner will be the house ragu (same ragu as you enjoy on our menu
Trapani sea salt capers cultivated in Pantelleria, dark green in color. Intense aromatic taste, high content of vitamins A, C, and B.
Femminello lemons, Pink grapefruit (Siracusa) or Tarocco orange. Just fruit and brown sugar. We love them on our charcuterie board or with our breakfast toast
Chef Giorgio's 'masterpiece"! PepeNero's house tomato sauce - we won't mind if you just end up drinking it ! (yes it's that good)
